Coffee Popsicles

Spring is officially here! With the weather warming up we thought we’d share how you can combine two of our favorite things: popsicles and coffee. They’re an easy treat to just grab from the freezer when you’re running late for work.

Here’s what you’ll need:

  • 2 cups of Rembrandt coffee, chilled
  • About 1 cup
  • A little sugar
  • Popsicle molds
  • Popsicle sticks

What to do:

  1. Take 1/3 cup of the cream and stir in a little sugar.
  2. Pour just about 1/4 to 1/2 inch of the cream into the bottom of each mold.
  3. Freeze the mold until the cream is solid. This should take about an hour.
  4. Mix the coffee, more cream and sugar in a glass measuring cup and stir until the sugar is dissolved. You will need about 2 1/4 cups total.
  5. Refrigerate until chilled.
  6. Pour the chilled coffee mixture into each mold and fill it to the top.
  7. Cover the top with foil, and insert the sticks.
  8. Freeze until solid.

Bagel Fruit Pizza

As we’re quickly approaching summer, it’s time to celebrate the season with fresh fruit. The bagel fruit pizza is a refreshing afternoon snack after a day at the pool, or a healthy breakfast packed with vitamins. Both kids and adults will love these delicious bagels.

 

Here’s what you’ll need:

  • 1 8oz block of cream cheese, softened
  • 2 tablespoon of part-skim ricotta cheese
  • 1 tablespoon lemon zest
  • 1 teaspoon of vanilla extract
  • 3 tablespoons of sugar
  • 4 Bagel Bakery bagels of your choice
  • Fruit of your choice (we recommend strawberries, kiwi, blueberries and grapes)

 

To make:

 

  1. In a standing mixer, beat together the cream cheese, ricotta, lemon zest, vanilla extract and sugar.
  2. Spread the cream cheese mixture onto each side of your bagels.
  3. The fun part – arrange the fruit to your liking atop the cream cheese.
